No Bake Energy Bites
So yesterday we were in my kitchen making some delicious No Bake Energy Bites. They can be used as a pre or post workout snack, or they can nibbled on in the afternoon if you experience a mid afternoon energy crash.
One of the reasons that I love this recipe so much is that it’s SOOOO EASY! It only has 5 ingredients and uses one simple kitchen gadget. So if you’re one of those people who feels as though they have no time…this could be an easy recipe you could try. They can be made quickly on a weeknight for snacks during the week or get your kids involved on a Sunday to help you roll the balls. Another amazing benefit to these No Bake Energy Bites is that you can make a batch and then freeze them for ease of snacking at any time! So lets get into the good stuff.
Dates- are an amazing source of fibre and naturally occurring sugar. They contain various vitamins such as thiamin, riboflavin, niacin, folate and vitamin A and vitamin K. They are also rich in minerals such as calcium, iron, phosphorous, sodium, potassium, magnesium and zinc. Dates have been traditionally used to help support healthy digestion, reduce anemia, improve bone health and are a natural energy booster.
Dried Apricots- are fibre rich and also boast an impressive vitamin and mineral content. They contain vitamins A, C, K, E, niacin, potassium, copper, manganese, magnesium and phosphorous. They help to reduce anemia, boost digestion and support healthy bones. Note* if you suffer from migraines, headaches or inflammation, look for a sulphite free dried apricot.
Tahini- is high in healthy unsaturated fat and is a rich source of minerals such as calcium, phosphorus, lecithin, magnesium, potassium and iron. It also contains methionine which helps to support liver detoxification. No Bake Energy Bites
Time: 20 min Yield: 12 Balls
- 1 cup Pitted Dates
- 1 cup Dried Apricots
- 1 cup Rolled Oats
- 1 tbsp Tahini
- 2 tbsp Cocoa Powder
- 1/4 cup Unsweetened Coconut Flakes
- Throw all the ingredients in a blender or food processor until the dates are fully incorporated
- Shape into 1″ balls
- Option: Roll in shredded coconut for an extra YUM factor
- Put in fridge for 10mins before serving
- You can also store them in the freezer for a quick snack
