Festive Guac

Holiday parities anyone?  Yes it’s that time of year to put on a fancy outfit, spread holiday cheer and eat appetizers!  So I thought I would share one of my favourite holiday appetizers I like to call it Festive Guacamole.  It’s green and red…..how much more festive can you get?   On top of it all…it’s healthy.   The best part is that the ingredient list is tiny; avocados, pomegranate, red onion, lemon, salt and pepper.  That’s it!

Why is it healthy?

Avocados:  Are rich in good healthy fats, called monounsaturated fats, which support healthy cholesterol levels and heart health.  They also boast a high level of soluble fiber, which helps lower cholesterol levels and maintain stable blood sugar levels. Avocados are also high in vitamin E, an antioxidant that regulates inflammation.  They also provide significant amounts of the essential minerals potassium and magnesium.

Pomegranates:  Are an amazing source of Vit C and polyphenol antioxidants which help support your body to reduce oxidative stress.  Antioxidants can also help to lower chronic inflammation, early signs of aging and benefit heart health.

So let’s get started with the recipe:

20141204_134928 First start by cutting your pomegranate in half and removing the seeds.  This a slightly time consuming process, so put on your favourite show and mindlessly remove the seeds from the skin.  I usually keeps 2 bowls out, one for seeds and one for skins.  Next you’ll want to cut the avocados in half and remove the flesh into another bowl.  Yes, you have 3 bowls on your counter.  The bowl with the avocado will be the bowl that everything else gets combined into.   Dump you avocado flesh in the bowl and start dicing about 1/4 of a red onion.  Add the onion to the bowl with the avocados and mash all together until desired consistency, a lumpy dip.  Now add about a 1/4 of the pomegranate seeds into the bowl with the onions and avocados and stir.

Finishing touches!  Add the juice of 1/2 a lemon and a dash of salt and pepper and stir to fully combine all ingredients.  Grab your rice chips or corn chips (if no corn sensitivity) and dip away.  One of my favourites is a Tortilla Chip by a company called “Food Should Taste Good”, its a chip made with brown rice, flax, quinoa and sunflower and sesame seeds.  Dip, Eat, Enjoy!
